Product Description

Tempeh is a fermented food, whereby you add tempeh culture to soybeans and let it ferment for a day or two. 

Our Temper Starter Culture is used for fermenting soybeans into nutritious probiotic-rich Tempeh. Our Tempeh Starter contains Rhizopus oligosporus spores, the essential microorganism for successful tempeh fermentation.

Tempeh is fermented soybeans which is nutrient-rich with a nutty, mushroomy flavour; perfect for stir-fries, soups, salads or frying and dipping in sauce as a snack. 

Making your own Tempeh yields a beautifully gluten-free and delicious tempeh than relying on store bought tempeh where you have no control over the ingredients.

How to Make Soybeans Tempeh (detailed instructions supplied with purchase). 

Making tempeh at home is a rewarding fermentation process. Follow these simple steps for delicious homemade tempeh:

  1. Prepare the dried Soybeans: Soak 2 cups of dried soybeans for 12-24 hours. Dehull the beans, then cook until tender. Drain the cooked soybeans and let them air dry. Drying the soybeans is important (is is ok if there is some moisture, just not pooling water).

  2. Mix with tempeh Starter: Once the soybeans are dry and at room temperature, mix in apple cider vinegar and your tempeh starter culture. 

  3. Pack your tempeh soybeans and Incubate: Place the inoculated soybeans in a perforated ziplock bag or a tempeh mold. Ensure the beans are about 1-inch thick for optimal fermentation.

  4. Ferment your tempeh soybeans: Incubate at a consistent temperature of 30°C for 24-48 hours. The tempeh is ready when it's covered with a white mycelium and has a firm texture.

  5. Store: Refrigerate for up to 4 days or freeze the tempeh for up to 6 months once fermentation is complete.

Note

For best results, use fresh non-gmo soybeans and maintain a clean working environment to prevent contamination. Store the starter culture in a ziplock pouch in the fridge. Make sure to bring the pouch up to room temperature before opening it each time. If this is not done, moisture will condense on the starter and ruin it. 

Traditional tempeh is often wrapped in banana leaves, but zip-lock bags work well for home fermentation.

Please note that fermentation cultures are shipped only on Mondays and Tuesdays to help maintain product quality during transit.

If your order contains products from different brands or suppliers, your items may be shipped separately and arrive in multiple deliveries. For example, products from Symbiota and Tiny Leaf NZ may be fulfilled by different suppliers, so shipment and delivery times can vary between items.

Refunds & Returns
If your order arrives damaged, faulty, or incorrect, please contact us at info@ecowellnesslab.co.nz within 7 working days of receiving your order. Include clear photos of the product and packaging so we can assess the issue and assist you as quickly as possible.

For food safety reasons, we do not accept returns of cultures.
